Banana Oat Cookie Recipe (Vegan, GFO)
If you plan for homestay travel, it's good to have some simple recipes in your back pocket to quickly whip up for your new (or old) friends.
Let's start with the best course - dessert!

Here is a super simple cookie recipe I love making when I'm a guest in someone's home. Its made with 5 easy ingredients usually found in any household.
A perfect snack or meal-finisher, and when they're baking in the oven the house smells amazing!
Ingredients
1 cup Oats (use gluten-free oats if necessary)
1-2 Ripe Bananas
1/4 tsp Vanilla Extract
1 Tbsp Cinnamon
Honey (to drizzle on top)

Optional Add-Ins
Nut butter
Chocolate chips
Directions

Preheat oven to 350F and prepare a baking sheet with parchment paper.
Mash the ripe bananas in a bowl until completely mush.
Add in oats, vanilla extract, cinnamon, and any optional add-ins.
Form dough into small balls and press into cookie-shape on baking sheet. (Note: they won't spread, so shape & space them however you want)
Bake for 10-15 minutes. Enjoy the aromas.
Drizzle with honey.
Let cool for 5 minutes, then serve!

I like to pop these babies on a plate or in a container and put them on the table for anyone to grab. Such an easy recipe made with ingredients you can usually find anywhere!
